Memorial Day is coming up quickly!  Are you ready to kick off summer!?!  I sure am!

Typically, we spend the weekend at BBQs and then our neighborhood pool opens so there’s always the first dip to start our summer off right.  But being a military family, we also take a moment to honor WHY we celebrate Memorial Day.

It isn’t about the great sales on a new grill, or [finally] getting a 3-day weekend to spend with the family.  It’s about honoring those men and women who gave their lives to serve our great nation in the Armed Services.

One way I like to show my appreciation during Memorial Day is to give back to those troops still serving.  Whether it’s by providing meals to those who are working on the holiday, or just swinging by with some cookies to say, “thanks.” I know it isn’t easy for them to see the rest of us enjoy our holiday while they are still serving and protecting. It is strawberry season in California, one of my favorite times of the year. A few weeks ago, Mini Me and I took a trip to a locally-grown, organic strawberry farm located in the Santa Ynez Hills. With an (almost) teenager, juggling a 50-plus hour a week career, and solo parenting, I struggle during the week nights to make a meal that both my daughter and I can enjoy that is still quick and easy.  I admit, I pick up take out more times than I really should, or we eat “leftovers” from the weekend meals for several meals during the week.

I pin so many meals on Pinterest with the intention of making them, but after a 30-minute commute battling traffic, I just don’t have the energy to tackle an hour-plus prep on a meal.  I am looking for ways to cut that time in half. (more…)

It’s the middle of March, and besides crazy weather patterns here in Colorado (70 degrees one day, snow and ice the next), we also know it’s the start of The Big Tournament, the ultimate in basketball playoffs.  I don’t know about you, but I feel like everyone around me is talking about their brackets – or busted brackets at this point.  The chatter around my office is at an all-time high about whose bracket is going to win the big office pool.  Each meeting starts with a good 5 minutes of trash talking.  It’s a fun way to keep the energies up, when the weather just won’t cooperate.

Goosebumps Movie Night with Monster Bark Recipe

I absolutely love movie nights with Mini Me.  In fact, with daddy away, these evenings mean that much more to us.  We laugh, we cry, and we bond.  We typically watch movies at home, just because its so much more comfortable.  We can lounge around, have our choice of snacks and relax after a long week of school and work.  Its even better in the winter when its too cold to go outside.

This past weekend, when the weather was on the chillier side, we chose to watch the new movie Goosebumps, with Jack Black.  He is one of my favorite actors, always silly and fun, but in this role, he was even more outstanding.  I was a fan of R.L. Stine’s Goosebumps as a kid.  He started writing them in 1992, when I was 9 years old.  So I was super excited to get to watch this new movie, a culmination of so many of his stories into one fast paced, super fun, family movie.  Mini Me loved the stories too, so it was a great way for us to bond over our two childhoods, and for her to make fun of how old I am.  (Prehistoric, I might add)

The most important part of watching movies at our house, though, is the snacks.  The luxury of watching movies at home is I can make fun snacks beyond the concession stand offerings.  Themed snacks may very well end up on the lineup that evening.  This evening was no exception with Monster Bark, perfect for all the movie’s monsters.  (more…)
