Memorial Day is coming up quickly!  Are you ready to kick off summer!?!  I sure am!

Typically, we spend the weekend at BBQs and then our neighborhood pool opens so there’s always the first dip to start our summer off right.  But being a military family, we also take a moment to honor WHY we celebrate Memorial Day.

It isn’t about the great sales on a new grill, or [finally] getting a 3-day weekend to spend with the family.  It’s about honoring those men and women who gave their lives to serve our great nation in the Armed Services.

One way I like to show my appreciation during Memorial Day is to give back to those troops still serving.  Whether it’s by providing meals to those who are working on the holiday, or just swinging by with some cookies to say, “thanks.” I know it isn’t easy for them to see the rest of us enjoy our holiday while they are still serving and protecting.

Hubby used to work shifts, so he often worked holidays – Christmas, Thanksgiving, you name it, he was there.  What I did love was how many families would send in food, to the point that they had a TON of leftovers for the next few days.  The outpouring from the military families and community was incredible.  In those hours when he couldn’t be with his family, he knew he was still appreciated.  In fact, I think he ate better than we did sometimes!  *wink*

One of my favorite shareable recipes, for any occasion, is my M&M’s® Monster Cookie Recipe.  These cookies have something for everyone:  sweet and salty, crispy and chewy, peanut butter and chocolate.  They are ALWAYS a hit at get togethers or squadron parties.

Ingredients

Instructions
  1. Preheat oven to 375 degrees. Grease or line baking sheets with parchment paper.
  2. Cream butter with sugars until fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Add vanilla and beat until combined.
  5. Combine flour, baking soda, baking powder, and salt. Slowly add to mixing bowl and mix till combined.
  6. Next, I pull the whisk off the mixer and add the next ingredients by hand with a strong spatula or wooden spoon. Add more chips or more M&M's® if you like.
  7. Lastly, I add in the rice cereal, but do not over mix. Add to the fridge for about 15 minutes to rest and harden up.
  8. With an ice cream scoop, measure out even scoops onto your baking sheet. I typically only do one sheet at a time in the oven, so that each baking sheet has time to cool off in between batches.
  9. Cook for 10 minutes on 375 degrees or until golden brown and the edges start getting a little bit crispy. Take out of the oven and leave on the baking sheet for about 2 minutes so the cookies have time to rest, then transfer to a baking rack.

This recipe is so easy to make, and feel free to adjust the mix-ins as you like.  I especially love adding in M&M’s® because of how melt-y they get in the oven.  The peanuts add in a nice crunch and the chocolate is gooey right out of the oven.  Don’t worry – if you eat one or two from the pan, you’ll still have plenty to share!

Did you know – M&M’s® were originally created for the troops? 75 years ago they were created as “rations” for the troops.  Seriously – what a fun “ration!”

This year, M&M’s® and Walmart are celebrating the Troops with a great campaign:  1 for You = 1 for the Troops.  MARS/Wrigley is showing appreciation of our troops by donating M&M’s® or Skittles® to the troops for every bag purchased at Walmart.
